When it comes to meatloaf and kids, they will either love it or hate it. By turning a plan meatloaf recipe into fun meatloaf cupcakes, you’re sure to please even the pickiest of eaters!
How To Make Meatloaf Cupcakes
To make these super cute meatloaf cupcakes, you will need the following ingredients:
- 2lbs ground beef
- 1 Box of Stove Top Stuffing for Pork
- 1 Cup of Water
- 1 Cup of BBQ Sauce plus extra to top your cupcakes
- 2 Large Eggs
Directions
Preheat your oven to 375 degrees. Combine all of the listed ingredients in a large bowl. Mix until everything is well blended. Spray two 12 cup muffin pans with cooking spray. Scoop the hamburger mixture into the muffin pans. I used my Pampered Chef large sized cookie scoop (one of my favorite kitchen utensils!) to do this. I was able to fill 21 of the 24 cups. Once all of your cups are filled, top them each with a little more BBQ sauce. I always use my Pampered Chef Silicone Basting Brush. I LOVE this brush. You can throw it right into the dishwasher when done, and you don’t have to worry about the bristles falling out. It’s definitely a “must have” tool for your kitchen!
Once your oven is preheated, pop your meatloaf cupcakes in and bake for about 1 hour, or until cooked through.
Mashed Potatoes
While your meatloaf cupcakes are in the oven, you can start peeling your potatoes. Once they are all peeled, wash them, dice them, and throw them in a pot. Add enough water to cover all of your potatoes. Add garlic powder and salt to the water. Boil your potatoes until soft enough to poke a fork through. Once they are cooked, drain the water out and place them in a large mixing bowl. Add butter and a little milk, then blend using a hand mixer until nice and fluffy. If they are too thick, add a little more milk.
Assembling Your Meatloaf Cupcakes
Once your mashed potatoes and meatloaf are done, it’s time to assemble your meatloaf cupcakes. Place all of your meatloaf balls on a plate and top with a scoop of mashed potatoes. Sprinkle warmed peas and corn, gently pressing into the mashed potatoes.
